Amazing Fried Banana Fritters: A taste to die for. The Very Best Technique for Making Great Fried Banana Fritters and How To Make The Batter for This Asian Style Dish; is a recipe style that was extensively used in Southeast Asia, but has now made its way to us and the menus of some of the Top Restaurants in the west, as a result of the welcome spread of Asian culture and cooking styles to the previously traditional West.
As world cultures blend, so to does the food and a whole raft of composite recipes. This is one that was introduced to me in it's original state, by friends from Vietnam. There are many variations to this throughout Laos, Cambodia and Thailand; my favorite is this recipe. I know you will love this as much as I do.
This is so easy to make and so tasty that it will become a favorite and you will become an expert in making. Consider that, after you have made and enjoyed this yummy East meets West Recipe. And if you find this recipe on a menu near you; well they probably copied it right here. Enjoy.
Try Not to Eat These!
Banana Fritter Ingredients:
1 Cup of Castor Sugar
3 Cups of Cornflour
½ Cup of White Sesame Seeds
½ Teaspoon of Chinese Five Spice
½ Teaspoon of Ground Aniseed Powder
2 Cups of Water
4 Large Bananas (Or one per person).
400ml Vegetable Oil (Not Canola Oil)
Icing Sugar (For dusting).
Vanilla or French Vanilla Ice Cream
Light and Fluffy Banana Fritters.
Preparation:
In a glass bowl break the 2 Eggs and lightly beat them with a fork until nicely mixed.
While beating the eggs, fold in the Castor Sugar, Sesame Seeds, Five Spices and Ground Aniseed Powder until they are completely mixed within the batter.
In a separate bowl pour in the Cornflour and while stirring this, add the water one cup at a time, mixing all the time into the Cornflour until you gain a smooth consistency with no lumps. Note: That you may not need to use all the water. Use only enough to gain that liquid consistency.
Now add the Cornflour mix into the egg batter, folding it gently into the batter until the batter has that same smooth consistency. Now you have your Banana Fritter Batter, so chill it uncovered in the refrigerator for up to an hour prior to cooking the fritters.
Note: If you don’t have the time to wait for the batter to chill; that is okay, but the best results come from using chilled batter.
Prepare the bananas by peeling them and cutting into diagonal bite size slices. Using a fork, submerge the banana slices into the chilled batter and ensure that they are well coated.
Ready to start cooking:
Heat your Wok to a Medium-High heat adding the Vegetable Oil which must not be so hot that it smokes. Once the desired (sizzle) heat is reached, you are ready to make this memorable dish.
Using a fork or tongs take the battered slices from the batter, cooking them seperately or one by one in the wok. They are ready as soon as they are golden in color. Place them on a warm plate covered with greaseproof paper which should absorb any excess oil. Keep this in a warm oven to maintain heat prior to serving. Also warm the serving plates in the oven as well, so that you do not commit the ultimate sin of plating hot food onto a cold plate. Work fast to ensure that your Fried Banana Fritters are all of equal serving temperature.
Serve on a flat plate
Arrange 4 – 6 Banana Fritters on them.
On top of the Fritters place a dollop (or two) of Ice Cream, so that it will melt evenly over the Fritters. Now with a sieve; dust the Banana Fritters with Icing Sugar. Serve and Enjoy.
Variations:
You can change this recipe almost anyway that you wish and it will remain great. Changing the Ice Cream flavor, or substituting it for straight or whipped cream will still taste perfect. You can also dust the Fritters with a little Cinamon, but keep in mind that it is also within the five spice mix. The Aniseed Powder enhances the spice mix, but the dish is still great without it, if you have difficulty finding that spice. Or you could try replacing Aniseed with Vanilla. It all works.

Oh I love banana fritters too. I used to make a similar recipe but this seems a lot more refined. I never heard of castor sugar and I always used wheat flour, milk instead of water and no additional spices. I will definitely give this a try soon.

Hi Jim, thanks for reading this recipe. What you have described is very interesting as it probably represents the 'standard' 70's western technique of making banana fritters. I guess you also had the bananas either whole or split in that batter?
This is very different... especially given the aroma that is created from heating the spices and in texture, given the nuttiness of sesame seeds. When you first cut into these Banana Fritters.. you will know from the amazing smell that is released. Enjoy.
